Juicing

A while ago I watched a documentary called Fat, Sick and Nearly Dead. 
If you haven't seen it, I highly recommend it. 

Here is a summary of the documentary: 
100 pounds overweight, loaded up on steroids and suffering from a debilitating autoimmune disease, Joe Cross is at the end of his rope and the end of his hope. FAT, SICK & NEARLY DEAD is an inspiring film that chronicles Joe's personal mission to regain his health. With doctors and conventional medicines unable to help long-term, Joe turns to the only option left, the body's ability to heal itself. He trades in the junk food and hits the road with juicer and generator in tow, vowing only to drink fresh fruit and vegetable juice for the next 60 days. {via}

Anyways, the documentary is obviously about juicing and the affect it had on Joe's life. It's was transforming and incredible! I sat back and thought...WOW, I need to start juicing NOW! Well it took me a while, but after saving up some Kohl's Cash and a 30% off I got my first juicer!! 

Here is my juicer! 




I LOVE my juicer! The first week I got it I juiced for breakfast every morning. I felt great...had more energy, felt healthier, and my 17 month old son loved helping me! 




I was a little nervous about starting the juicing process because I have heard horror stories about some of the juice recipes out there. So, for the first week I made up my own recipes. MOST were good! I did write down all my recipes and my opinions on them and will post some recipes this weekend so stay tuned!

Valentine's Day Breakfast

On Valentine's Day our little Valentine decided to FINALLY sleep past 5:30am...and slept until 7:00am! It was wonderful! Then while him and daddy hung out I made us breakfast. 


We had heart shaped French Toast (and no we didn't waste the scraps), strawberries, bacon and smoothies. 

I used a regular French Toast recipe and then cut them out with heart shaped cookie cutters, they were good!. 


I attempted to cut the strawberries into hearts. The bacon was interesting because I baked it and it was Turkey bacon (although I normally like Turkey bacon). 
The smoothies were a big fail!! I used WAY too many frozen bananas!! SICK! 


However, breakfast sure did look pretty!

Show Us Your Singles- Jessica, 29, Minnesota

Without further ado...meet Jessica!

Jessica and I meet 9 1/2 years ago at Crown College! We both played for the Crown College Softball Team! Jessica was one of our amazing pitchers! 



Jessica works for Target Headquarters as a Director Assistant in Product Design and Development. 
Don't ask me what that means! :) 


Jessica is a loving, outgoing, woman with a passion for life! Some of her interests/loves include MN summers (she loves warm weather), animals, Twins games, blogging, walks around the lakes,  weekends up at the lake/cabin and of course the MN State Fair!! 




Jess is incredibly easy to talk with and a ton of fun to spend time with! She enjoys a night in watching a good movie or a night out with friends!

Show Us Your Singles- Bekah, 29, Minnesota

Without further ado...meet Bekah!

Bekah and I have been friends for almost 10 years!! We meet my Freshman year of Crown College! We lived on the same floor and that started the friendship! Bekah is an amazing friend! She has been there for me through thick and thin, and the ups and downs.

Bekah is a beautiful woman of God, both inside and out! She has a heart and passion for youth. She enjoys working with them at her church. Bekah is currently in Seminary at Bethel University studying Transformational Leadership.

Bekah and her family are huge fans of the MN Twins! Bekah loves a good baseball game!
