Slow cooker Sunday

Now for the super easy and super yummy...

Jumbo Honey BBQ Wings

*This is so easy you might be mad at me for posting it...ha ha!*

1 Package of Jumbo Wings
1 Bottle of Honey BBQ Sauce (at least 18 oz...mine was a little more)

Place the wings, still frozen, in the Slow Cooker and then cover with the Honey BBQ sauce. Cover and cook on low for 5-6 hours. Keep an eye on the wings so the meat doesn't fall off the bones!

My husband said these wings were the best thing I had ever made in the Slow Cooker! Seriously?! Not sure what it says about everything I actually put work into! We might need Wednesday Wing day!

Enjoy!

Slow Cooker Sunday: Chicken Alfredo Lasagna

Happy Sunday...oh wait, it's Monday. Yes, I was completely confused yesterday on what day it was (thinking it was Saturday even at 10:45pm), so needless to say this is getting out today, on the real Monday!

Don't forget to grab a button and link up! Comment below if you link up so I can stop by your blog! And remember to check out The Winking of an Eye for another Slow Cooker Sunday recipe!

Slow cooker Sunday

Today's recipe, Chicken Alfredo Lasagna, comes from 365 days of Slow Cooking's website.

I must first apologize for the lateness of my post and then apologize because there is NO picture. I was late coming home from work and our lovely guests had already arrived so we dished, served and ate...and forgot pictures! Oops! *I will make this again and update with a picture*

I will post the recipe as found on the website and list my changes in red.

Chicken Alfredo Lasagna

6 Lasagna noodles, uncooked (I used 9)
16 oz jar Alfredo Sauce
2 Tbsp water
3/4 c. Chicken, cooked and diced (I used 1 1/2 c)
8 oz Cottage Cheese (I used 10-12 oz)
1 c. Mozzarella Cheese, grated (I used 1 1/2 c)

Break 2-3 noodles to fit into the bottom of your slow cooker. Layer a third of the Alfredo sauce, 1 Tbsp of water, and half of the chicken over the noodles. Spread half of the Cottage cheese (4-6 oz) and sprinkle a third of Mozzarella cheese over the meat layer. Add another layer of noodles. Repeat...Layer a third of the Alfredo sauce, 1 Tbsp of water, and remaining chicken over the noodles. Spread half of the Cottage cheese (4-6 oz) and sprinkle a third of Mozzarella cheese over the meat layer. Layer remaining noodles, sauce and Mozzarella. Cover and cook on low heat for 4-5 hours. Do not cook more than 5 hours.

Sides:
For side dishes we added Garlic Bread and a Spinach salad. We had Cake Cones for dessert!

Review:
We LOVED this recipe! My husband is not a fan of red sauce so this was perfect! It serves 5. We had 4 adults get seconds and our little man didn't eat too much because he was distracted. You could easily double this recipe and still have room in the slow cooker. Not sure if that would adjust your cooking time though. Super easy, kind of healthy (minus the Alfredo sauce), family friendly meal that we WILL be making again!

Enjoy!

Slow Cooker Sunday: Salsa Chicken

Today is the third edition of Slow Cooker Sunday! Emily from The Winking of an Eye is joining us again with a Breakfast recipe, so hop on over and show her some love!

This weeks recipe is SO easy!! And we know I love EASY!

Salsa Chicken

6 Skinless, Boneless Chicken Breast*
1 Package Taco Seasoning
16 oz Salsa
1 can of Black Beans

*You could do more or less Chicken Breast*

Place the frozen Chicken Breast in the Slow Cooker and cover with the Taco Seasoning and Salsa. Cook on low for 6-8 hours. Periodically, because I was home, I would break up the Chicken (after it was mostly cooked) with a fork! In the end it was completely shredded. You could skip this step and just shred it at the end as well. We served this over Rice the first night and in tacos for lunch the next day.

This meal is kid friendly.

Enjoy!

Have you been using your Slow Cooker lately?

Juice for Breakfast

I LOVE my  Jack LaLanne's PJEB Power Juicer Express, Black. I purchased it a few months ago and use it several times a week, mostly for breakfast. It's very quick and pretty easy to clean. Actually, very easy to clean except the blades. Even my 18 month old son gets excited when I bring out the juicer, fruits and veggies.

Here is our most recent juice we made for breakfast...

2 Oranges (peeled)
1 Green Pepper (seeded)
1 Apple (cored)
4 Carrots

Our juicer says to put soft fruits, like oranges through first and then the harder ones like apples. The ingredients listed above is in the order I juice them.

This juice was very good. You could taste the veggies a little more then some I have made, but not in a bad way! It made just over 16 ounces of juice.

I did end up making my son his own with just 1 Orange and 2 Carrots. That was enough for 6 ounces and he loved every drop!

Do you have a juicer? What's your favorite go to recipe?

Cake Cones

Cake Cones. Have you heard of them? Have you tasted them? They are yummy. I did not believe that you could bake cake in ice cream cones, but you can and it is good! Oh did I mention they are super easy?!

All you do is get a cake mix (or if you are one of those Betty Crocker types and can make your own like it's no body's business, then do that) and make it according to the box/recipe...

Line a 9x13 cake pan with 12 cones at a time. (*batter makes 24)
Then fill the cones 3/4 the way full with cake batter.

Bake at 325 degrees for 30 minutes.

Let cool completely, then....

FROST, DECORATE and EAT!!

*Holly's beautiful cupcake!*

Now go bake a batch and enjoy!

Slow Cooker Sunday: Creamy Chicken Noodle Soup

Well, we made it to the second edition of Slow Cooker Sunday! Today my dear friend, Emily, from The Winking of an Eye is joining in on Slow Cooker Sunday! Make sure you stop by and see what she has cooking in the cooker today! Today's recipe was given to me by my college friend, Jen.

Here it is...

Creamy Chicken Noodle Soup

2 cans condensed Cream of Chicken Soup (low fat works well)
2 c. Shredded Chicken**
1 package frozen mixed vegetables
1 tsp. Black Pepper
1 tsp. Garlic Salt
3 c. Wide Egg Noodles

**Canned works well. I also put in 2 frozen chicken breasts and then just broke them up with a fork after a few hours of cooking.

Combine soup with 5 cups water in the slow cooker. Mix well, so there are no chunks. Add chicken, frozen vegetables, pepper, and garlic salt. Cook on low for 7-8 hours or high for 3-4 hours. Once the time is done add the egg noodles and cook on high for an additional 20-30 minutes. Serves 4-6 people.

Family friendly meal...

Enjoy!

Slow Cooker Sunday: Mama's Homemade Chili

Welcome to the FIRST edition of Slower Cooker Sunday! Sundays at our house are ALWAYS super busy with church in the mornings and small groups in the evenings, plus several things in between those two events. That's why I decided to start using my Slow Cooker on Sundays! I mean, who doesn't want an easier life, right?!?!
So first up is...Mama's Homemade Chili!

My mom gave me a recipe for Homemade Chili and we loved it! One day I didn't have all the ingredients that my mom's called for and thus began my own recipe for chili.

Mama's Homemade Chili

1 Jug of V8 Juice: Spicy
1 lb. Hamburger (browned)
1 can Kidney Beans (drained)
1 can Fat-free Re-fried Beans (*optional)
1 can Black Beans (drained/rinsed)
1 can of Corn (drained)

Brown the hamburger in a pan on the stove. After it is browned, drain grease and add the hamburger and all other ingredients into your crock-pot. Cook on high for 4 hours or low all day long.
Serve with cheese and sour cream on top. Enjoy!

Breakfast Quiche

I found a recipe for a Quiche on allrecipes.com the other day but of course didn't have all the ingredients, so I used the recipe and substituted my own ingredients. It turned out so yummy!

Ingredients

  • 1 ounce bacon bits
  • 1/2-1 lb of Hamburger or Ground Sausage (drained)
  • 1/2 cup chopped onion (or Onion Onion from Tastefully Simple)
  • 6-8 ounces Mozzarella cheese
  • 1 (9 inch) deep dish frozen pie crust
  • 4 eggs, lightly beaten
  • 1 cup half-and-half cream*

*If you need a substitute for half-and-half use 3/4 c Whole Milk and 1/4 c Heavy Whipping Cream

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a medium bowl, mix the bacon, hamburger, onions, and cheese. Place this mixture in the unthawed pie crust.
  3. Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
  4. Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.
  5. Enjoy!

Happy 100th Birthday Oreo!!

Today is Oreo's 100th Birthday! That is something to celebrate! So...we did with a rendition of this OREO & Ice Cream Sandwich Cake! *I don't have a printer that has ink at the moment nor do I have a laptop with wireless so I was half doing this by memory and half with a "recipe" of jotted down notes! I apparently can't read though and missed the part about adding in the oreos! Ha ha!

Here is what it should look like...

Here is what mine looked like...

The Recipe: (from Kraft)
1/2 cup hot fudge ice cream topping, warmed
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding
16 OREO Cookies, chopped (about 2 cups), divided
12 vanilla ice cream sandwiches

POUR fudge topping into medium bowl. Whisk in 1 cup COOL WHIP. Add dry pudding mix; stir 2 min. Stir in 1 cup chopped cookies. (I forgot this part so I added a layer in their of cookies)

ARRANGE 4 ice cream sandwiches, side-by-side, on 24-inch-long piece of foil (I placed this on top of a pan); top with half the COOL WHIP mixture. Repeat layers. Top with remaining sandwiches. Frost top and sides with remaining COOL WHIP; press remaining chopped cookies into COOL WHIP on top and sides of cake. Bring up foil sides; double fold top and ends to loosely seal packet. (I don't know what double fold means...but I covered it at least)
FREEZE 4 hours. (It really needs 4 hours...we gave it like 1 hour)

It was enjoyed by all!
Did you do anything to celebrate Oreo's birthday??

*My blogger hates me tonight and is messing up my post...sorry for the awkwardness of it*

Freezer Meal: Chicken Corn Chowder

I LOVE having freezer meals in our freezer! It's make my life easier! I also feel like I can give my family a healthy meal without all the work that day. So may times I will feel rushed from work, church, etc and not feel like cooking a meal...which some times leads to crappy meals or fast food...neither a good choice. I have decided to be more diligent about keeping at least 8 meals in our freezer a month! It also helps that I am in a freezer group where we make meals and swap them monthly!

I made soup this last swap! I love hearty soup on a cold fall day! This recipe I got from my friend Bert, at FTM.

{Picture courtesy of tasteofhome.com}

Chicken Corn Chowder

14.5 oz. can of chicken broth or make the same amount with bouillon
1 C chopped onion
1/8 t pepper
12 oz can evaporated skim milk
1/4 C flour
12 oz can whole kernel corn - drained
1 C diced cooked chicken (I use canned sometimes)

In a medium saucepan combine broth, onion, and pepper.  Bring to boil, then reduce heat. Cover and simmer for 5 minutes until the onion is tender.
In small bowl, stir together flour and milk. Stir this into the broth mixture with whisk. Cook and stir until thickened.  Stir in corn and chicken.
Heat through. If desired, garnish with parley flakes.

Enjoy!

Cheesy Zucchini Bake

I had some Zucchini left that my mom and grandma grew and thought I better use it up before it goes bad!
I decide to make up a new recipe.

Here is it...

1. Chop up one large zucchini into quarters.

2. Add 1/3 c. Olive Oil, Chives, Seasoned Salt, Seasoned Pepper. I didn't measure out my seasonings, just added some of each. (Probably 1- 1 1/2 Tbsp of Chives, 1/4-1/2 tsp of salt/pepper).

3. After stirring it all together in the bowl, pour the mixture into an 8x8 baking pan.

4. Put it in the oven at 350 for 20-25 minutes.

5. Take it out and add cheese...lots of cheese! (Well unless you don't love cheese like we do)

6. Put it back into the over for another 10 minutes.

7. Remove and serve!

Cheesy Zucchini Bake
1. Cut 1 large Zucchini into quarters
2. Add 1/3 c. Olive Oil, Probably 1- 1 1/2 Tbsp of Chives, 1/4-1/2 tsp of  Seasoned salt/Seasoned pepper (I didn't measure these out, just added some of each)
3. Pour into an 8x8 baking pan.
4. Bake at 350 degrees for 20-25 minutes
5. Remove and add Cheese
6. Bake again for another 10 minutes
7. Remove and serve!

I had added 1/2 c. Olive Oil and that was too much...so I would add 1/3 c. Also it could have used a little more kick...so maybe more pepper or some paprika.

Let me know if you try it and if you try something different!

Italian Cream Soda

Last night I decided to make some Italian Cream Sodas for the Senior High students at our church during their YouTube Movie night!

With help from a few other leaders they were a success!

Here is the recipe:

Italian Cream Sodas
8oz. Ginger Ale
3 TBSP. Flavored Syrup (my favorite is Raspberry)
2 TBSP Half and Half
Ice

They are SUPER easy to make...
We used 16 oz glasses which were perfect size.
Have the cup 1/2 full of ice then start adding ingredients.

Pour in the Ginger Ale first...

Then add your flavored syrup...

Then add your Half and Half...

Stick a straw in and stir...

Then enjoy...

I thought I would show you how cheap you can make these drinks. Last night I made 24 (16 oz) drinks. Here is the break down in cost. I bought everything at Cub Foods with no coupons.

10 lbs of ice: $1.95
(*I later found out you can get a 10 lb bag at Arby's for $1)
Cups (for 24): $1.20
Straws (for 100): $0.85
Ginger Ale (off brand): $2.40 (for 3-2 liters)
Half and Half: $1.35 (used 1)
I had the flavored syrup already..can't remember the price. Bought it at Sam's Club, I believe around $4 and it's a large bottle. Cub was $4.99 for a small bottle (I didn't buy it).

Each drink was around $0.30 give or take a few cents since I can't remember the syrup cost. I bought mine at Sam's Club and if you have to buy it at Cub or Walmart your cost will go up more then at Sam's Club.

National S'more Day

Yep you read that right...today is National S'more Day! What a good day!! I mean, a day set aside to be guilt free for eating ooey gooey marshmallows smothered in melted chocolate in between two graham crackers! Aaahh! Anyone else want one right now?!?!

Well in honor of S'more Day the little man and I are going to make two different recipes. We are going to make S'more Brownies and S'more Rolls.

The S'more Brownies are found on allrecipes.com but I can't find where I first saw the S'more Roll/S'more Croissant recipe. I know how to make them...but want to give credit where it is due.

After we make them this evening I will post pictures! Anyone making anything for National S'more Day??

P.S. If you want to read a little about National S'more Day check out this link.

Sweet Potato Fries

We love Sweet Potato Fries!

Especially my little man!

So I whipped up a batch last night.

Start with two LARGE Sweet Potatoes. You can peel them if you want.

Slice them into fries, while preheating your over to 400 degrees.

Then add them all to a zip lock bag.

In a bowl, mix your Olive Oil, Cinnamon and Brown Sugar together.

Then add your mixture to your bag and mix around until all fries are coated.

Then place on a baking sheet and bake for 30-40 minutes or until potato "meat" is tender.

And enjoy!!

Here is my recipe!

Sweet Potato Fries

2 large Sweet Potatoes (about 30-40  long fries)
1/4 c. Olive Oil*
1/2 tsp Cinnamon
1/2 tsp Brown Sugar

Preheat oven to 400 degrees while cutting the potatoes into fry shapes. Then put them into a zip lock bag. In a bowl mix the Olive Oil, Cinnamon and Brown Sugar together, then pour over the Potatoes in the bag and mix around. After they are coated lay on a baking sheet and bake at 400 degrees for 30-40 minutes or until tender. The skins will get a little crispy but the potato "meat" stays tender.

*You could even use a little less oil...my fries felt a little greasy.
